Lemon Slice Recipe

You asked, and now you will receive!

Lemon Slice


Ingredients Needed:
Base:
100g butter, softened
1/4 cup icing sugar
1 cup plain flour

Topping:
2 eggs
2 teaspoons finely grated lemon rind
2 Tablespoons lemon juice
1 cup Caster sugar
2 Tablespoons plain flour
1/2 teaspoon baking powder

To Make:
1. Grease a square/rectangular baking pan, line with baking paper. Preheat an oven to 180C.

2. Start with the base. Combine butter and icing sugar until smooth. Gradually stir in the cup of plain flour until all is mixed together well. (I put this mixture into the fridge for about half an hour, but you don't have to.)

3. Press 2/3 of the base mixture evenly across the bottom of the prepared pan. (Reserve 1/3 to crumble in later.) Cook in oven for 15-20 min.

4. Meanwhile make the topping. Beat the eggs together in a bowl until combined then stir in the rest of the ingredients until well mixed.

5. Pour topping over base. Crumble the last 1/3 of base mixture across the top of your dessert.

6. Pop it back into the oven for another 25-30 min. or until the top is crisp. Let cool in pan.

7. Cut slice into squares; dust with icing sugar and serve!

I served mine with fresh sliced strawberries and vanilla custard. It was deeelicious!
